Offshore Chief Cook

Job Summary
This pivotal role combines hands-on cooking with team management, inventory control, and ensuring the highest standards of sanitation and safety. As a key member of our crew, you will craft regional, sustainable, and fresh menus that enhance our guests’ experience while maintaining operational excellence in a challenging marine environment.

Responsibilities

  • Oversee all aspects of meal preparation and presentation, adhering to Lindblad’s menu matrix and emphasizing regional, sustainable, and fresh ingredients.
  • Lead and supervise the galley team, including training and development of staff.
  • Manage food provisioning, ordering, and inventory, ensuring FIFO rotation and quality control.
  • Prepare and cook dishes, including butchering, portioning, and plating, while accommodating special dietary needs and allergies.
  • Support the company’s sustainable seafood program and maintain sanitation standards in compliance with Lindblad, CDC, and Canada Health regulations.
  • Coordinate with suppliers and oversee provision loading, ensuring quality and timely delivery.
  • Stay updated on culinary trends and adjust menus accordingly.
  • Communicate effectively with the Hotel Manager regarding operational matters and onboard safety protocols.
  • Supervise galley operations during CDC inspections and ensure uniform compliance among crew members.
  • Participate in safety training, drills, and emergency procedures, maintaining proficiency in all safety and security standards.

Requirements

  • Minimum of 2 years’ experience managing a culinary team, preferably on passenger ships.
  • Formal culinary training from a recognized culinary school is preferred.
  • Strong time management skills with the ability to handle multiple tasks, prioritize, and meet deadlines.
  • Excellent communication skills, both written and oral, with the ability to work effectively with team members and office personnel.
  • Physical ability to work on your feet for 10-12 hours daily in a high-temperature galley environment, lift up to 50 pounds regularly, and perform physically demanding tasks in a moving vessel.
  • Current First Aid/CPR/AED certification.
  • STCW Basic Safety Training, Crowd Management, and Maritime Security Awareness certifications (training provided).
  • Valid USCG Medical Card per STCW standards.
  • Ability to adapt to remote living conditions, including shared quarters, limited internet, and extended periods at sea.
  • Willingness to undergo drug testing, background checks, and physical examinations as required.
